Creamy Truffle Pasta
There is nothing quite like the earthy, luxurious flavor of truffle paired with fresh pasta. This creamy truffle pasta is an indulgent, soul-satisfying dish that comes together in less than 30 minutes. It's the perfect recipe to impress a dinner guest or to treat yourself after a long week!
Ingredients
- 250g fresh tagliatelle or fettuccine
- 2 tbsp butter
- 1 clove garlic, minced
- 200ml heavy cream
- 2 tbsp truffle paste or truffle oil
- 50g freshly grated parmesan cheese
- Fresh parsley, chopped
- Salt and freshly ground black pepper to taste
Instructions
Step 1: In a large pot of boiling salted water, cook the fresh pasta until al dente (usually 3-4 minutes). Reserve ½ cup of pasta water before draining.
Step 2: In a large skillet or pan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
Step 3: Lower the heat and slowly pour in the heavy cream. Let it simmer gently for a couple of minutes until it starts to thicken slightly.
Step 4: Stir in the truffle paste (or oil) and the parmesan cheese. Stir continuously until the cheese has melted and the sauce is smooth.
Step 5: Toss the drained pasta into the sauce. Add a splash of the reserved pasta water if needed to loosen the sauce. Mix well until every strand is beautifully coated.
Step 6: Serve immediately, garnished with chopped fresh parsley, extra parmesan, and a crack of black pepper.
